Would the attack have changed the outcome of the Battle of Gettysburg and the war? Or could the Union veterans have withstood the Southern onslaught?

The Battle of Champion Hill was the decisive action of the Vicksburg Campaign in hindsight. After Grant had pushed Pemberton off of Champion Hill and forced him back to Vicksburg, the Siege became a (rather bloody, as it turned out) formality. Author Scot Gore recommends only experienced players attempt this large scenario, which was originally designed for convention play.
